About This Recipe

The WAC (World AeroPress Championship) style recipe is inspired by competition entries that prioritise clarity and complexity. Competition recipes often use lower temperatures, longer steep times, and unusual ratios to highlight specific bean characteristics.

Competition recipes push the brewer to its limits. The longer steep and lower temperature extract more sweetness and acidity while keeping bitterness low, which is what judges reward.

High-quality single-origin coffees with clear flavour notes you want to showcase. Less suited to commodity blends.

  • Tip: Use filtered or mineral water with moderate hardness (75-150 ppm TDS). Water chemistry matters more at competition level.
  • Tip: Grind fresh immediately before brewing. Stale coffee is the fastest way to lose complexity.
  • Tip: Keep the brew environment warm. A cold kitchen will lower your water temperature mid-brew and shift extraction.
