James Hoffmann's Clever recipe refines the standard method with a specific ratio, temperature, and bloom technique borrowed from his pour-over work. He treats the Clever as a serious brewer capable of producing excellent results with minimal effort.

Hoffmann's key insight is that the Clever rewards longer steeps than most recipes suggest, and that a brief bloom before sealing the valve improves extraction evenness across the bed.

Works well across light, medium, and medium-dark roasts. One of the most forgiving methods for any roast level — the immersion approach limits extraction variance from technique differences.

  • Tip: Start with a 45-second bloom using twice the coffee weight in water, then seal the Clever and add the remaining water.
  • Tip: Give the slurry a gentle stir after sealing. This levels the bed and ensures uniform extraction during the steep.
  • Tip: Release onto the cup at exactly 3 minutes. Time from first water contact, not from sealing.
