About This Recipe

Hoffmann's cold brew recipe applies his characteristic rigour to a method often made casually. He specifies exact ratios, grind settings, and steep parameters to produce a consistently excellent cold brew concentrate.

Hoffmann found that most home cold brew is over-steeped or under-filtered, resulting in muddy or astringent results. His method addresses both with a precise steep time and a two-stage filtration approach.

Medium roasts with well-defined sweetness. Hoffmann's method reveals clarity in the cup that pure cold extraction can sometimes obscure.

  • Tip: Use a 1:10 coffee-to-water ratio (by weight) for a full-strength concentrate. This is stronger than typical cold brew, intended to be diluted 1:1 before serving.
  • Tip: Filter through a paper filter after the initial coarse filter. Two-stage filtration removes fine particles that can make cold brew cloudy and bitter over time.
  • Tip: Steep for exactly 12 hours in the refrigerator. Longer steep times beyond 14 hours produce diminishing returns and increased bitterness.
