Lance Hedrick is a specialty coffee educator known for his methodical approach to brewing. His Orea recipe uses a short, high-agitation steep followed by a controlled drawdown to produce exceptional clarity in the cup.

The Orea's flat-bottom design and wide aperture allow very fast drawdown, which minimises the risk of over-extraction. Hedrick's technique leverages this by keeping the slurry turbulent through the bloom.

Light roasts with delicate floral or citrus notes that get lost in slower-drawing brewers. The Orea's speed preserves brightness.

  • Tip: Use a flat-bottomed paper filter for the most consistent results. Rinsing it thoroughly removes any papery taste.
  • Tip: Pour in tight circles during the bloom phase. Hedrick emphasises full saturation of all grounds in the first 30 seconds.
  • Tip: Keep a narrow, low pour for the main water addition. Height adds turbulence, which can destabilise the extraction.
