About This Recipe

Jia Ning Du won the 2020 World Brewers Cup using the Origami dripper with a recipe that emphasises high agitation and multiple short pours. She is a Chinese barista champion known for applying scientific precision to competition brewing.

Du's recipe uses frequent small pours to maintain a high water level over the grounds, which increases turbulence and extraction efficiency. The Origami's wide aperture and fast drain support this high-agitation approach without clogging.

Light roasts with complex acidity and clear fruit notes. Du's competition recipe was designed to highlight the full spectrum of a high-quality single-origin bean.

  • Tip: Keep pours small and frequent — around 50–60 ml each. This maintains even extraction across the bed better than large, less frequent pours.
  • Tip: Pour in circles from the inside out, then back to centre, to ensure full and even saturation.
  • Tip: Aim for a total brew time of 2:30–3:00 minutes. The Origami drains faster than a V60, so total time will be shorter for the same grind.
