Tetsu Kasuya adapted his 4:6 method for the Origami dripper, taking advantage of the brewer's fast drain rate to create more distinct extraction phases. The Origami's pleated walls space the filter from the body, allowing particularly clean separation between pours.
The Origami's speed means each pour drains quickly, making the phase separation of the 4:6 method more precise than in a standard V60. The first 40% phase drains fully before the 60% phase begins, giving cleaner control over acidity and strength.
Medium to light roasts with good sweetness. The faster drain rate means a slightly coarser grind than V60 is needed, which suits medium-light roasts particularly well.
